There is a file called confix.xml in the map where you installed Gunz. Rightclick -> Edit and you can edit all your graphic and other custom stuff manually. Just change every 16 or 32 to 8 and your resolution to something low.
This is what I use for Video Options: (1024x768 screen btw)

You can also just put the MAPTEXTURELEVEL values to something low and keep a good resolution and character look, but you won't get the laglessness (word pls XD) that you get with what I use. (Copy the above data, but change the TEXTUREFORMAT from '8' to a '0'. Same goes for CHARACTORTEXTURELEVEL. (Low number=High Quality=More 'laggy' gameplay)
